Right click on the Desktop and select Properties from the menu
In the Properties window go to the Setting tab
There is a place there for turning on and off the second monitor.
Depending on your video card, its drivers may add an additional tab to the Properties with more Advanced options for controlling a second monitor. You may have to loom around for such settings.
Disable teh second monitor, either by right click desktop>properties>display tab, or in your gaphics card settings (ATI catalyst has an option for 2 monitors). If for some reason you don;t want to disable the monito, you can right click on the box in the start bar and click move. Hold left click and drag the window back into view.

Change the multi-monitor settings, just right click on the background and go to properties. It must be in one of the tabs in there.
